After a series of successful pop-ups at a local mall last year, Rita Magalde, owner of Sheer Ambrosia in Salt Lake City, Utah, decided to rent a mall kiosk for her baklava business this holiday season.

“I don’t want to be negative, but it was tough,” Magalde said. “I’m still doing the math and looking at it in different ways, trying to find the positive in it all. But the reality is I did not sell enough.”

She continued her traditional online sales through the holiday season, and she’s now preparing for Valentine’s Day, hoping to break into the traditional market for chocolates and other candies.
