Food writer Mark Schatzker argues that while nutritious food is getting bigger and blander, junk food keeps getting more flavorful, giving us incentive to eat healthy. He explores the issue in his new book, “The Dorito Effect: The Surprising Truth about Flavor and Food.” We chatted with him about the link between taste and nutrition.
